With all the food history that is made in the Bay Area, it should come as no surprise that the first and only sake shop in the country is right here in Hayes Valley. Dot-bomber-turned-master-sake-sommelier Beau Timken opened True Sake in August 2003. His mission is to demystify sake for the Western lover of Japanese beverages, and he's off to a fabulous start with an inventory of over 150 sakes. True Sake specializes in nama (unpasteurized sake) and carries the largest selection of nigori (unfiltered sake) outside of Japan. Timken has accumulated a great deal of sake wisdom over the years–"I drank a lot of bad sake so my customers don't have to"–which he dispenses at True Sake, along with a vast collection of glassware and sake sets.
